Sweetlife® Chocolate Mini Muffins
Ingredients
2 x eggs (50g each) separated
20 g unsalted butter
150 g ricotta cheese
1/2 teaspoon vanilla extract
180 g sweetlife® bake mix Chocolate Fudge Brownie
Method
Preheat oven to 180C. Grease two mini muffin trays.
Beat egg yolks, butter, ricotta cheese and vanilla until pale. Add sweetlife® bake mix Chocolate Fudge Brownie. Blend on slow speed. Beat mixture for 2 minutes on medium speed.
Beat egg whites until soft peak form. Add quarter of beaten egg whites and combine to loosen chocolate mixture. Gently fold remainder of egg white.
Pipe mixture into muffin tin.
Bake for 20 minutes. Leave cookies to cool for 5-10 minutes. Turn onto wire rack.
Makes 18 mini muffins. Suitable for freezing.
